
Garlic Crusted Salmon
Garlic crusted salmon over red pepper puree and arugula

- 1 Salmon Fillet
- 1 8 Oz Jar Roasted Red Peppers
- 1 Salt & Pepper
- 1 Minced Garlic
- 1/2 cup Melted Butter
- 1/2 cup Panko Bread Crumbs
- 2 ounce Arugula
Steps
- Chop roasted red peppers and heat them on the stove over low heat. Season to your preference
- Create crust by mixing garlic, melted butter, and panko bread crumbs in a small bowl
- Cut salmon in half to make 2 portions. Season with salt and pepper
- Heat a pan over high heat and add a little bit of cooking oil or spray to coat the pan
- Add salmon and sear each side for 1 minute
- Spread garlic crust over the salmon and place into a preheated 400° oven for 10 minutes or until crust toasty on top
- Place red peppers in a blender and pulse for 10 seconds. Add to plate
- Put a handful of arugula in the red pepper puree, you can saute first but the heat of the red pepper puree is enough to wilt the arugula
- Place salmon on top of the arugula and serve
