Tomato bruschetta with french bread crostinis

Ingredients

Total Servings: 4

  • 3 Tomatoes
  • 2 tablespoon Chopped Garlic
  • 1 teaspoon Salt
  • 1 Black Pepper
  • 2 ounce Olive Oil
  • 3 ounce White Wine (Chablis Preferred)
  • 2 ounce Shaved Parmesan
  • 2 ounce Fresh Julienned Basil
  • 1 ounce Loaf French Bread
  • 1 fluid ounce Balsamic Glaze

Steps

  1. Chop tomatoes into 1/4" squares and place in mixing bowl
  2. Add minced garlic and gently combine with tomatoes
  3. Add oil, salt, pepper, and wine. Mix well
  4. Let mixture sit in mixing bowl for 30 minutes to fully absorb flavor
  5. While mix is marinating, slice french bread into 16-20 even slices
  6. Lightly brush bread slices with olive oil and place in pre-heated 300° oven for 10 minutes
  7. To serve; use a slotted spoon to scoop bruschetta into serving bowl to remove most liquid
  8. Top the bruschetta with parmesan cheese and drizzle balsamic glaze across bread and bruschetta
  9. Garnish with fresh basil and enjoy
